This is definitely a user error, but I'm wondering if the app can make the error harder to commit. ;)
Multiple times I have accidentally selected To Read rather than Read when transitioning the status from Currently Reading. I'm aiming for Read but my finger lands on To Read. Then my daily page progress is lost as is the start date of my reading, even if I immediately switch to Read or Currently Reading.
Some ideas: a bit more space between the options, or a Read button showing when the current status is Currently Reading (and a More menu for all the other possible transitions from Currently Reading), or an "oops"/undo to restore the Currently Reading data and let me try again to hit Read.
I use the Android app on a Pixel 3 and keep both my phone and app updated to latest.

Hello! Thank you for this post. Your reading journal progress should not be deleted unless you hit "Remove book" though, as moving to "to-read" does not perform any delete operations. If this happens again, leave the app as-is and email in asking to assign the ticket to me as a follow-on to this roadmap post. Then I can take a look and help make sure no progress is lost!
