Would like a notepad or way to jot down thoughts as we're reading the book that we could come back to and reference when typing out a formal review after completing the book.

You can do this in journal entries if you make progress updates! I use that to make notes and keep track of quotes. I would love a way to easily see the entries when writing reviews though.
